This comes in handy, since I know many people want that perfect bird for the holiday, yet many don't keep butchers twine on hand in the kitchen, and duct tape just won't work in this situation. Next option: use what's handy, good old safety wire. Clean, annealed stainless steel wire is quite effective. Why do we truss it up anyways? Trussing has a perpose. Since we'll be roasting, we want that hot air to circulate through the center of the bird, legs and thighs to cook, and wings not to burn. Trussing holds it all in just the right position.
And, it looks stylish too.
